Sir Nicky!! Soooo YUMMMMY!!!


I was missing my American pancakes when I stepped into Russia. It´s actually one of my favourite guilty pleasures (along with Martinis and Lip Gloss). Buttermilk pancakes are the Best! The thought of slipping a piece of that hot, fluffy, honey drenched, heaven into my mouth makes my hungry Every time. Like Pavlov´s dog, I began to salivate at the mere thought of pancakes. I wanted a huge pile of them for my first meal in Moscow. "No problem" my coordinator said to me, when met at Sheremetyevo airport. A perfect and cozy meal for the cold, rainy weather that greeted me.


I sat in disbelief, staring down at my plate of pancakes. "What is this?" I asked my coordinator. We were at a 24 - hour Diner, and the waitress just brought our meals to the table. I had ordered a meal similar to IHOP´s "Grand Slam" breakfast.


"You ordered pancakes. She brought you pancakes." My coordinator said. The pancakes were round and flat, like saucers. It takes about three Russian pancakes to equal the size of an American traditional pancake. Needless to say, I was very disappointed. I searched frantically for American pancakes in Moscow, but it was a hit and miss. The more I frequent Moscow, the less my quest for American pancakes diminished. Several years later....Sir Nicky strolled into my life It was LOVE at first Bite.


This fluffy and sweet little nugget of joy has made a permanent dent in my taste buds. It´s one of my staple breakfast items. And BONUS: It´s made from cottage cheese. So not only is it delicious, it is great for the body. "It is high in protein and calcium, both of which have been associated with weight loss. Cottage cheese is packed with casein protein. Very few healthy foods are delicious enough for me to eat everyday. So I was GIDDY when introduced to Sir Nicky. If your country doesnt have them, I heard they are very easy to make. According to the internet, it takes 15 minutes maximum. I do not know if that´s true or not, bc I dont cook. Try it out, and let me know your thoughts.
